The trend of Atlantic City brunches is certainly changing. Instead of lavish, all-you-can-eat gourmet brunches, casino restaurants are now focusing on offering special brunch menus all weekend, as opposed to just Sundays.

One Atlantic City at Revel offers a brunch that stands out. Featured noon to 4 p.m. Fridays, and 10 a.m. to 4 p.m. Saturdays and Sundays, One’s brunch has some amazing items from healthy salads to over-the-top breakfast creations.

Overseen by Executive Chef Tim Hamill and Executive Sous Chef Juan Hernandez, One’s brunch features some familiar items from its dinner menu that are certainly worth devouring if you get a later start, such as the tuna tartare ($15) with avocado, soy emulsion and taro chips; Kobe sliders ($17) with One special sauce and truffled cheese; and the chopped vegetable salad ($13) with cucumbers, olives, feta cheese, avocado and red wine vinaigrette.

But the additions are what are really worth checking out, such as the butterscotch pecan pancakes ($15) with coconut cream, roasted pecans and butterscotch sauce; PB&J french toast ($14) made with brioche bread and caramelized bananas; the biscuit and eggs Benedict ($15) with flaky biscuits and an amazing Hollandaise sauce that has a little spicy kick to it; and Huevos Rancheros ($14) that is truly authentic with black beans, sunny eggs, chorizo and tomato salsa served with tortillas.

Familiar sides such as truffled skinny fries ($8) and lobster mac ‘n’ cheese ($19) add to the experience. Plus, there’s a great selection of brunch cocktails, including a solid Bloody Mary.

One recently teamed with Ivan Kane’s Royal Jelly Burlesque Nightclub for Burlesque Brunch Packages. The $100 package includes a burlesque class where ladies can get up close and personal with the Royal Jelly dancers as they share their striptease secrets, a feather boa and champagne, plus guests will indulge in a pre- or post-lesson prix-fixe brunch that includes some of the menu’s best choices.
